Orange Biscuits

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. In a mortar, combine the grated orange rind, sweet almonds, pounded sugar, and egg whites.

  2. Mix well with a pestle until the mixture is very light.

Bake and finish

  1. Drop small lumps, about the size of a walnut, onto doubled paper on a baking tin, spacing them apart.

  2. Bake in a moderate oven at 350°F (175°C) until done.

  3. Remove from the oven and let cool before taking them off the paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the bulk and rich, nutty texture of the biscuit.
Pounded lump sugar
Adds sweetness and helps the mixture hold together as it bakes.
Egg whites
Bind the mixture and help it set and lighten when beaten.
Grated orange rind
Contributes the characteristic citrus aroma and flavour.

The step that matters

Mix with a pestle until very light. Beating the mixture well traps air in the egg whites, which lightens the dough so the biscuits bake up tender rather than dense.

Swap the orange

How well each one fits the dish's main ingredients (almond, sugar, egg):
