What each ingredient does

Milk
Curdles with the citrus acid, which helps clarify the punch as it is strained.
Sugar
Adds sweetness that balances the sharp citrus and the alcohol.
Oranges and lemons
Supply acidity and aromatic oils from the peel and juice.
Rum or brandy
Extracts flavor from the peel and adds aroma and body.

The step that matters

Strain through a jelly bag until clear. Milk curdles when it meets citrus acid, and the curds must be fully filtered out. Straining slowly through a fine jelly bag traps them and leaves a clear liquid.
