What each ingredient does

Salt codfish
Provides the main body and savory flavor of the fritters.
Eggs
Bind the fish mixture together and help the fritters hold their shape.
Onions
Add sweetness and moisture as they soften in butter.
Tomatoes
Add acidity and moisture to the fish mixture.
Butter
Adds richness and helps the fritters brown in the pan.

The step that matters

Frying the fritters. Fry in butter over moderate heat until light brown. Too little heat leaves the fritters greasy and pale, while too much browns the outside before the centre sets, so it is best to keep the heat steady.
