Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Pound together the sweet and bitter almonds.

  2. Mix in the sifted sugar and orange flower water.

  3. Add the egg yolks and whisked egg whites. Mix thoroughly.

Bake and serve

  1. Bake in a 400°F (200°C) oven for 30 minutes or until firm enough to turn out.

  2. Sift sugar over the pudding.

  3. Pour a rich syrup flavored with orange flower water around it.

  4. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavor of the pudding.
Egg yolks
Enrich the custard and add richness and moisture to the pudding.
Egg whites
Whisked for air, they lighten the texture and help the pudding rise and set.
Sifted sugar
Sweetens the pudding and helps it brown lightly on the surface.
Bitter almonds
Add a concentrated almond aroma to the pudding.

The step that matters

Bake until firm enough to turn out. Egg proteins set as the pudding heats, so underbaking leaves it loose and collapsing, while overbaking makes it dry and rubbery. Check firmness at the stated time before removing it from the oven.

Swap the orange

How well each one fits the dish's main ingredients (almond, sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against almond, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
