What each ingredient does

Beef
Provides the main meaty flavor and body as its proteins and fats release into the broth.
Onions
Frying until brown builds sweet, deep savory flavor that carries into the broth.
Vermicelli
Adds soft, starchy strands that absorb some broth and give the soup bulk and texture.
Carrot
Adds natural sweetness and aromatic depth to the simmering broth.

The step that matters

Skimming off the foam during the simmer. Foam is coagulated proteins and impurities that cloud the broth and can taste bitter if left in. Skimming keeps the soup clear and clean-flavored over the long simmer.
