What each ingredient does

Round of beef
Forms the bulk of the dish, becoming tender and sliceable during long slow baking.
Saltpetre
Cures the meat, helping it keep its pink colour and developing a firm, cured texture.
Sugar
Balances the salt and spices and softens the cure's savoury bite.
Suet
Adds fat that bastes the beef and keeps the surface moist during baking.
Coarse sea salt
Draws moisture out of the beef and seasons it through the curing period.

The step that matters

Sealing the pan with the paste and brown paper. The sealed paste lid traps steam so the beef cooks gently in its own moisture. If it leaks, the meat dries out over the long bake.

Swap the clove

How well each one fits the dish's main ingredients (beef, sugar, nutmeg, allspice):

  1. Cinnamonfits better
  2. Clovethe original
  3. Cardamomfits less well
  4. Marjoramfits less well

Fit is the average pairing score against beef, sugar, nutmeg, allspice. Candidates are from the same food group and used in at least 100 recipes.
