Mutton Croquettes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut the mutton into finger-sized pieces.

  2. Lard the pieces with ham bacon.

  3. Simmer in stock with sweet herbs until cooked.

  4. Remove the meat and reduce the gravy, then strain it over the pieces.

  5. Season each piece with fowl seasoning.

  6. Wrap each piece in a slice of bacon.

  7. Brush with egg and sprinkle with bread crumbs.

  8. Bake at 350°F (175°C) until golden.
