Ingredients

Directions

  1. Parboil the sweet bread and let it cool.

  2. Cut the sweet bread into pieces about 1 inch thick.

  3. Season with salt, pepper, and sage.

  4. Dip the pieces in egg yolk and coat with fine bread crumbs.

  5. Fry until light brown.

  6. Alternatively, fry slices of salt pork until brown, then remove the pork and fry the sweet bread in the fat.

  7. To make gravy, stir a little flour and water mixed smooth into the fat, then add spices and wine if desired.
