Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster or crab meat
Provides the main flavor and the bulk of the cutlet filling.
Butter
Browned with the flour to add a nutty, rich flavor to the base.
Flour
Thickens the browned butter so the mixture holds together when shaped.
Strong stock
Moistens the thickened base, giving it savory depth and a soft texture.
Egg yolk
Binds the coating so the bread crumbs adhere to the cutlets.
Bread crumbs
Form a crisp, golden outer crust when fried.

The step that matters

Let the mixture cool before shaping. A hot, loose filling is too soft to hold its shape. Cooling lets the starch-thickened base firm up so the cutlets keep their form through coating and frying.

Swap the parsley

How well each one fits the dish's main ingredients (meat, butter, flour, pepper, egg, bread, beef):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Thymefits about as well
  4. Capersfits less well

Fit is the average pairing score against meat, butter, flour, pepper, egg, bread, beef. Candidates are from the same food group and used in at least 100 recipes.
