Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Thanksgiving Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cut the chickens into small pieces as for fricassee.

  3. Cover the bottom of a pie dish with layers of veal and ham, alternating them.

  4. Season with chopped mushrooms, parsley, pepper, and coarse sea salt, then add a little gravy.

  5. Arrange the chicken pieces neatly in the dish and place slices of hard boiled egg in each cavity.

  6. Repeat the seasoning and add more gravy.

  7. Lay thin slices of dressed ham on top.

  8. Cover the pie with puff pastry and decorate with pastry cut into leaf shapes.

  9. Brush the pie with egg wash and bake for 1.5 hours.
