Whortleberry Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and pick over the whortleberries.

  2. Place the berries in a deep pie crust, an inch thick.

  3. Cover the berries thickly with sugar.

  4. Optionally, add a few red currants or lemon juice among the berries.

Bake and serve

  1. Put on the upper crust and bake for 30 minutes at 350°F (175°C).

  2. Sift powdered sugar over the pie before serving.

What each ingredient does

Whortleberries
Provide the main fruit filling, releasing juice that thickens and flavours the pie as it bakes.
Sugar
Sweetens the filling and draws juice out of the berries, helping form a syrup.
