Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide starch that feeds the yeast and gives the starter body.
Hops
Add bitterness and aroma and help preserve the starter against spoilage.
Brewer's yeast or hop/cake yeast
Ferments the sugars and starch, producing carbon dioxide that leavens bread.
Brown sugar
Provides quick-acting sugar that gives the yeast an early food source.

The step that matters

When cool, add the brewer's yeast or hop/cake yeast.. Adding yeast to a hot mixture kills it, so the liquid must cool before the yeast goes in. Cooling to a warm, not hot, temperature keeps the yeast alive and able to ferment.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar, ginger):

  1. Mustardfits better
  2. Capsicumfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against hops, sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
