Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hops
Adds bitterness and aroma that help flavour the starter.
Potatoes
Provide starch and body that feed the yeast.
Sugar
Gives the yeast a quick source of food to ferment.
Yeast
Ferments the mixture, producing the leavening activity of the starter.

The step that matters

Add the yeast only once the mixture is cool. Yeast is killed by high heat, so adding it to the boiling hop water would stop fermentation. Letting the mixture cool first keeps the yeast alive so it can ferment properly.

Swap the potato

How well each one fits the dish's main ingredients (hops, flour, sugar):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
