To Preserve Mushrooms

Ingredients

Directions

  1. Cut the mushrooms as for stewing and place them in a saucepan.

  2. Stew the mushrooms until all the liquid is drawn out, then continue until it is fully absorbed.

  3. Once dry, add a good lump of butter, cayenne pepper, and salt.

  4. Boil the mixture, then pour it into small sweet-meat pots.

  5. Cover the pots with butter and store them.

  6. When ready to serve, warm them up and finish with a little white sauce.
