What each ingredient does

Shin of beef
Provides meat flavour and gelatine, giving the stock body as it simmers.
Lean ham
Adds savoury, salty depth to the stock's overall flavour.
Onions
Contribute sweetness and aroma as they cook down into the liquid.
Carrots
Add gentle sweetness and aromatic background to the stock.
Celery
Adds a fresh, vegetal aroma that rounds out the stock.
Peppercorns
Release warm, pungent aroma into the liquid during the long simmer.

The step that matters

Skim frequently while simmering. Skimming removes coagulated proteins and fat that rise to the surface, keeping the stock clear and preventing cloudiness or greasy off-flavours.

Swap the onion
