What each ingredient does

Beef
Browning and long simmering release savory flavor and make the meat tender.
Onions
Frying until brown builds sweet, deep savory flavor into the broth.
Carrot
Adds natural sweetness and body to the vegetable broth.
Turnip
Adds mild earthy flavor and soft texture as it cooks in the broth.

The step that matters

Skimming the foam during the simmer. Foam rising during a long simmer carries impurities and proteins that can make the broth cloudy and taste bitter. Skimming it keeps the soup clear and clean-tasting.
