What each ingredient does

Mutton
Provides the main savory meat and rich flavour that the dish is built around.
Potatoes
Add starch and bulk, soaking up juices so the layers become tender and hearty.
Flour
Coats the meat and helps thicken the cooking juices into a richer sauce.
Finely chopped onion
Adds aroma and savory sweetness as it cooks inside the pudding.
Suet crust
Forms an enclosing pastry that seals in steam and juices while the pudding cooks.
Gravy or stock
Supplies moisture that keeps the meat and potatoes from drying out during baking.

The step that matters

Sealing the suet crust. The top crust must close fully over the basin edges so steam and juices stay inside. A gap lets moisture escape, leaving the mutton and potatoes dry and the gravy thin.
