  1. Cut thin slices of veal and divide them into neat pieces.

  2. Place some seasoned forcemeat on each piece and roll them up tightly.

  3. Tie each roll with coarse thread and place them on a spit.

  4. Dip each roll in beaten egg yolks and coat with flour.

  5. Baste the rolls with butter and cook for half an hour.

  6. Prepare a gravy with chopped truffles and mushrooms, and pour it around the rolls when serving.
