Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form a crisp, golden coating that browns and crisps when fried.
Egg
Helps the bread crumbs adhere to the cow heel pieces as a binder.

The step that matters

Frying the coated pieces in hot grease. The grease must be hot enough that the coating crisps and browns quickly. If it is too cool, the crumbs absorb grease and turn soggy and heavy instead of golden.

Swap the parsley

How well each one fits the dish's main ingredients (bread, pepper, egg):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Marjoramfits less well
  4. Sagefits less well

Fit is the average pairing score against bread, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
