Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tripe
Forms the main body of the dish and, once boiled until tender, gives it a soft, chewy texture.
Eggs
Act as a binder so the bread crumbs stick evenly to the tripe pieces.
Bread crumbs
Form a crisp coating that browns in hot fat, adding crunch and colour.

The step that matters

Let the tripe cool completely before cutting and rolling. Cooled tripe is firmer and holds its shape better, so the pieces are less likely to tear or unroll when cut, rolled and tied.

Swap the mace

How well each one fits the dish's main ingredients (egg, bread, onion, sauce, lemon, tomato, ketchup):

  1. Capersfits better
  2. Parsleyfits better
  3. Celeryfits better
  4. Macethe original

Fit is the average pairing score against egg, bread, onion, sauce, lemon, tomato, ketchup. Candidates are from the same food group and used in at least 100 recipes.
