Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine hen-turkey
Provides the main meat, which becomes tender through long gentle boiling and stewing.
Bread crumbs
Absorb the butter and egg yolk inside the bird, keeping the stuffing moist and soft.
Butter
Adds richness and flavour, and with flour thickens the sauce.
Egg yolk
Binds the stuffing together so it holds its shape during cooking.
Celery
Becomes tender in the stew and adds a mild, aromatic vegetable flavour to the sauce.
Cream
Enriches the sauce, adding smoothness and body.

The step that matters

Stewing the turkey breast down in the saucepan. Boiling the turkey and then stewing it gently keeps the meat tender. If the liquid boils too hard, the meat can toughen and dry out, and the stuffing may break apart.

Swap the celery

How well each one fits the dish's main ingredients (turkey, bread, lemon, pepper, butter, egg, cream):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Sagefits better
  4. Celerythe original
