What each ingredient does

White meat of roast or boiled fowl
Provides the bulk of the mixture and its meaty, flaky texture.
Pounded cheese
Adds richness and savoury body that helps the mixture hold together.
Mustard
Adds sharp, pungent flavour that cuts through the richness.
Mushroom ketchup
Contributes concentrated savoury, umami depth.
Sweet oil
Adds fat that gives moisture and a smoother mouthfeel.

The step that matters

Mixing the mixture well. Thorough mixing spreads the strong seasonings, such as the anchovy sauce, mustard and chillies, evenly through the minced meat so no bite is overpowering. Uneven mixing leaves pockets of intense flavour.
