What each ingredient does

Beet roots
Provides colour and a firm, crisp texture that holds up in the pickling liquid.
Vinegar
Acidifies the brine, preserving the vegetables and giving the pickle its sharp flavour.
Button onions
Adds pungent sweetness and a layered texture alongside the roots.

The step that matters

Slightly boil the roots in vinegar. Boiling too long softens the roots and loses the crispness that makes pickled roots appealing. Brief heating partly cooks them while keeping their structure firm, so they absorb the brine without turning limp.
