What each ingredient does

Cabbage
Forms the bulk of the pickle and provides crisp texture after salting and draining.
Onions
Add sharp, savory flavor and bulk to the pickle.
Celery
Adds crunch and a fresh, vegetal flavor to the pickle.
Mustard seeds
Provide pungent heat and a sharp, mustardy flavor as the pickle sits.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Vinegar
Acidifies the vegetables, sharpening flavor and helping preserve the pickle.

The step that matters

Draining after salting. Salt draws water out of the vegetables. Draining them well before adding vinegar keeps the pickle crisp and stops it from becoming watery and diluted.
