Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare a rich paste and roll it out thinly. Cut into circles using a biscuit cutter.

  2. Grease a shallow tin pan with butter and lay the circles of rich paste on it.

  3. Roll out the puff paste and cut it into circles of the same size.

  4. Use a small glass to cut a hole in the center of each puff paste circle, leaving a rim.

  5. Place the puff paste circles on top of the rich paste circles.

  6. Brush the tops with sweetened egg white for a better appearance.

  7. Bake in a preheated oven at 400°F (200°C) until light brown.

  8. Once baked, fill the centers with jelly or sweetmeats.
