What each ingredient does

Medlars
Provide the pectin and tart fruit flavour that the jelly is built on.
Lump sugar
Sweetens the jelly and helps it set firm and hold its shape.

The step that matters

Boil for one hour. Boiling concentrates the juice and drives off water so the pectin and sugar can reach the proportions needed to gel. Too short a boil leaves a runny jelly that will not set.
