What each ingredient does

Raspberries
Provide the main fruit flavour and colour of the drink.
Vinegar
Extracts flavour from the fruit and adds a sharp acidity that balances the sweetness.
White sugar
Sweetens the drink and, once boiled, helps preserve it.

The step that matters

Removing scum while boiling. Scum rising during the 30-minute boil can spoil the clarity and flavour of the drink, so it should be skimmed off as it forms.
