What each ingredient does

Lemon juice
Provides the sharp acidity that defines the lemonade's flavour.
Syrup
Adds sweetness to balance the acidity of the lemon.
New milk
Softens the sharpness and, once curdled and strained, clears the drink.
Madeira or sherry
Adds fortified wine depth and aroma to the lemonade.

The step that matters

Pouring the boiled milk into the mixture. Adding hot milk to acidic lemon liquid makes it curdle, and the curds carry particles that cloud the drink. The jelly bag strain removes these curds, so the lemonade becomes clear.
