What each ingredient does

Striped bass steaks
Forms the main body of the dish, cooked gently in the poaching liquid.
Eggs
Thicken the sauce as they set with gentle heat, giving it a creamy body.
Lemon juice
Adds acidity that brightens the sauce and balances the richness of the eggs.
Fish cooking liquid
Carries flavour from the poached fish and onion into the sauce.

The step that matters

Cooking the egg mixture over low heat without boiling. Egg proteins set gently between about 160 and 180°F. Boiling or overheating can curdle the eggs and leave the sauce grainy instead of smooth and lightly thickened.

Swap the onion
