Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the butter and sugar.

  3. Add the milk and mix well.

  4. In another bowl, combine the flour, baking soda, and cream of tartar.

  5. Gradually add the dry ingredients to the wet mixture.

  6. In a separate bowl, separate the egg yolks from the whites.

  7. Add the yolks to the batter and mix until smooth.

  8. Whip the egg whites until stiff peaks form and fold them into the batter.

  9. Pour the mixture into a greased baking dish and bake for 25 minutes.

  10. Serve hot, spread with butter.
