What each ingredient does

Celery
Provides the main flavour and body of the soup as it simmers in the stock.
White stock
Forms the liquid base that carries the celery flavour and cooks the vegetable through.
Butter
Adds richness and a rounder mouthfeel to the broth.
Cream
Stirred in at the end to add smoothness and richness to the soup.
Flour
Optionally thickens the soup, giving it a heavier body.

The step that matters

Stir in the cream carefully. Cream can curdle or separate when it is added to very hot liquid or boiled after adding. Adding it in spoonfuls and keeping the soup below a boil helps it blend smoothly.

Swap the celery

How well each one fits the dish's main ingredients (ham, butter, cream, bread, flour, pepper):

  1. Nutmegfits better
