Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavor, color and moisture of the ice cream.
Sugar
Adds sweetness and lowers the freezing point, keeping the mixture softer.
Heavy cream
Adds fat, giving a rich, smooth and creamy texture.
Whipped cream
Adds air, making the finished ice cream lighter and less dense.
Whole strawberries
Add pieces of fruit that give a contrasting bite in the frozen ice cream.

The step that matters

When it begins to set, stir in 1 pint whipped cream.. Folding whipped cream into a partly frozen base traps air and keeps the texture light. Adding it when the mixture is fully liquid lets it deflate, and adding it when fully frozen makes it hard to mix evenly.

Swap the strawberry

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberrythe original
  3. Raspberryfits about as well
  4. Raisinfits less well

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
