Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Thickens the drink as its proteins gently set when heated, giving it body.
Sherry
Forms the main liquid and supplies the wine's flavor and gentle acidity.
Sugar
Adds sweetness to balance the sherry and the egg.

The step that matters

Heat gently in the saucepan. Egg proteins thicken as they warm, but too much heat makes them tighten and curdle, leaving a grainy texture. Slow, gentle heating keeps the drink smooth and well blended.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sherry, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Clovefits less well

Fit is the average pairing score against egg, sherry, sugar. Candidates are from the same food group and used in at least 100 recipes.
