  2. Thicken the soup with cream and flour.

  3. Serve the soup with the cutlets in a tureen.

What each ingredient does

Cod's head
Gives the stock its body and rich fish flavour as it simmers.
Fish cutlets
Provide the flaky fish pieces that are served in the soup.
White wine
Adds acidity and aroma while the cutlets stew.
Cream
Adds richness and a smooth, velvety texture to the soup.
Flour
Thickens the soup by swelling with liquid when heated.
Butter
Adds fat and richness to the cutlets as they stew.

The step that matters

Thicken the soup with cream and flour. Flour must be cooked out in the hot liquid to thicken smoothly without lumps or a raw starchy taste. Adding cream too hot or boiling it hard can cause it to curdle, so keep the heat gentle once the cream is in.

Swap the mace

How well each one fits the dish's main ingredients (fish, pepper, celery, parsley, thyme, onion, white wine):

  1. Marjoramfits better
  2. Tarragonfits better
  3. Fennelfits better
  4. Macethe original

Fit is the average pairing score against fish, pepper, celery, parsley, thyme, onion, white wine. Candidates are from the same food group and used in at least 100 recipes.
