Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Mutton Collops

Ingredients

Directions

  1. Cut and trim the mutton into collops the size of a teacup.

  2. Flatten each collop and spread forcemeat on both sides.

  3. Fry the collops until cooked through.

  4. Prepare the potatoes, Jerusalem artichokes, and bread in the same manner and fry them.

  5. Layer the collops, potatoes, artichokes, and bread alternately in a dish.

  6. Serve with a simple gravy or hot and dry on a napkin, garnished with fried parsley and lemon slices.

  7. For the knuckle, cover it with water, season, and simmer until thoroughly cooked.

  8. Thicken the gravy with prepared barley and flavor with lemon pickle or capers.

  9. Color the gravy slightly with saffron and serve with celery sauce or a purée of turnips.
