Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

French roll
Forms the body of the fritters, absorbing milk and egg to become tender inside.
Milk
Soaks into the bread, adding moisture so the slices stay soft inside.
Eggs
Coat the bread and set when fried, giving a golden, custardy crust.
Clarified sugar
Sweetens the fritters and forms a syrup that soaks in while they are hot.

The step that matters

Fry the bread until half cooked, then soak and fry again. Frying first sets the egg coating and firms the slices so they hold together; the second soak and fry then brown the outside while keeping the interior moist.

Swap the orange

How well each one fits the dish's main ingredients (milk, egg, sugar, cinnamon):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against milk, egg, sugar, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
