Cook the jam

  1. Boil the bruised strawberries with a small amount of water for 20 minutes, stirring until well mixed.

What each ingredient does

Strawberries
Provide the fruit flavor, color and body that the jam is built on.
Powdered loaf sugar
Sweetens the jam and, with boiling, helps it thicken and set while preserving it.

The step that matters

Adding the sugar and simmering. Sugar must be cooked with the fruit long enough to concentrate and reach a set point. Too little cooking leaves a runny jam, while the sugar amount controls how firm and sweet the result is.
