To Boil Fish

Ingredients

Directions

Prepare the fish

  1. Scale the fish and remove the insides, fins, gills, and tail.

  2. Wash the fish well, inside and out, and wipe it dry.

  3. Place the onion inside the fish and tie it up in a cloth.

Boil

  1. Cover the fish with cold water, add salt and vinegar, and heat to boiling.

  2. If the fish weighs 2 pounds or less, remove it immediately; for each additional pound, boil for 1 more minute.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the dish, cooking through gently in the simmering water.
Onion
Adds a mild aroma to the fish as it cooks inside the cloth.

The step that matters

Timing the boil by weight. Boiling too long toughens and dries the fish, while removing it too early leaves the flesh undercooked near the bone. Following the weight-based timing keeps the flesh moist and cooked through.

Swap the onion

How well each one fits the dish's main ingredients (fish, vinegar):

  1. Cucumberfits better
  2. Mustardfits better
  3. Horseradishfits better
  4. Onionthe original

Fit is the average pairing score against fish, vinegar. Candidates are from the same food group and used in at least 100 recipes.
