Roast Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Roast the beef

  1. Preheat the oven to 400°F (200°C).

  2. Place the beef in the oven and dash 1 cup of boiling water over it to retain juices.

  3. Baste frequently with salt, water, and drippings.

  4. Roast for about 15 minutes per pound for rare, longer for well done.

  5. Remove the beef and place it on a dish.

Make the gravy and serve

  1. Skim the drippings, then add 1 cup of boiling water and stir in 1 teaspoon of flour mixed with cold water.

  2. Season the gravy with pepper and salt to taste.

  3. Serve the beef with mustard or scraped horseradish.
