What each ingredient does

Rib roast
Forms the main body of the dish, and its marbling keeps the meat moist and tender.
Saltpeter
Helps preserve the meat during curing and gives it a characteristic pink color.
Molasses or brown sugar
Adds sweetness and moisture that balance the salt in the cure.
Ground cloves
Contributes a warm, pungent aroma to the spiced crust.
Ground allspice
Adds a warm, aromatic flavor that complements the other spices.

The step that matters

Cook slowly over low heat. Gentle heat lets the connective tissue soften while the meat stays tender. Vigorous boiling tightens the muscle fibers and makes the beef tough and dry.

Swap the allspice

How well each one fits the dish's main ingredients (molasses, clove, pepper):

  1. Allspicethe original
  2. Cinnamonfits about as well
  3. Gingerfits less well
  4. Nutmegfits less well

Fit is the average pairing score against molasses, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
