What each ingredient does

Cucumbers
Provide the main bulk and fresh flavour, and release water when salted.
Onions
Add pungency and savoury depth that balances the cucumber's mildness.
Vinegar
Adds acidity that sharpens flavour and helps preserve the mixture.

The step that matters

Squeezing the mixture dry. Salting draws water out of the cucumbers and onions. If that water is not squeezed out, the ketchup stays thin and watery and can dilute its flavour and keeping quality.

Swap the onion

How well each one fits the dish's main ingredients (cucumber, pepper, vinegar):

  1. Capsicumfits better
  2. Radishfits better
  3. Mustardfits better
