Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Chop or slice the cold meat finely.

  2. Season the meat with salt, pepper, and sage if desired.

  3. Add half as much stale bread or boiled potatoes to the meat. Stir the mixture together.

Bake

  1. Enclose the mixture in a pie crust.

  2. Bake for 30 minutes at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold meat
Forms the main body of the filling and provides savory flavor.
Stale bread or boiled potatoes
Absorbs moisture and bulks out the filling, keeping it tender rather than dry.

Swap the sage

The recipe marks sage as optional. How well each one fits the dish's main ingredients (meat, pepper, bread):

  1. Thymefits better
  2. Parsleyfits about as well
  3. Marjoramfits about as well
  4. Sagethe original

Fit is the average pairing score against meat, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
