What each ingredient does

Red snapper
Is the main protein that is cooked gently in the poaching liquid until flaky.
Lemon juice
Adds acidity that brightens the flavour and helps firm the surface of the fish.
Salt
Seasons the fish and flesh throughout.

The step that matters

Boil gently, skimming carefully. A hard rolling boil breaks the delicate fish apart and clouds the liquid. Gentle simmering cooks the flesh evenly, and skimming removes foam that would otherwise settle on the fish.
