Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Place the quails in a pan with a little hot water.

  3. Baste the quails well and roast for 20 minutes.

  4. Serve quickly, garnished with sprigs of parsley.

  5. Place 1 teaspoon of black pepper inside each quail and add pork on the outside, then baste the quails well.

  6. Fill each quail with chestnut stuffing before roasting.

What each ingredient does

Quails
The main protein; it cooks in its own fat and juices as it roasts.
Pork
Adds fat and moisture to the outside of the quail as it roasts.
Chestnut stuffing
Adds starch, body and sweet, savoury flavour inside each bird.
Black pepper
Adds sharp aroma and gentle heat to the meat.

The step that matters

Basting and roasting the quails for 20 minutes. Quail is small and lean, so it dries out quickly in the oven. Basting spreads the fat and juices over the surface, helping keep the meat moist and browned.
