  2. Drain the water in the morning.

Cook the pudding

  1. Bring the milk to a boil.

  7. Pour into a pudding dish.

Top and brown

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body and a tender, slightly chewy set.
Eggs
Yolks enrich and thicken the pudding, while whipped whites add airy structure to the topping.
Milk
Forms the liquid base that the tapioca swells in and the custard sets from.
Granulated sugar
Sweetens the pudding and helps the whipped egg whites hold their structure and brown lightly.
Grated coconut
Adds coconut flavour and fat, and browns on top of the pudding in the oven.

The step that matters

Cooking the tapioca in the milk. Tapioca must be fully hydrated and cooked through, or it stays firm and grainy. Stirring keeps the starch from sticking and scorching on the bottom of the pan while it thickens the milk.

Swap the coconut
