Macaroon Ice Cream

Ingredients

Directions

  1. Sweeten the cream to taste and pour it into a freezer.

  2. When partially frozen, finely crush the macaroons and stir them in.

  3. Grate the rind of one orange and add it along with the juice of all three oranges and the vanilla extract.

  4. Freeze hard, then pack the freezer with small pieces of ice and a quantity of coarse sea salt to keep the cream cold until serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich cream
Provides fat and body, giving the ice cream its smooth, rich texture.
Macaroons
Add crisp, almond-sweet crumbs that contrast with the smooth frozen cream.
Oranges
Add acidity and citrus aroma from the juice and rind to balance the sweetness.
Sugar
Sweetens the cream and softens the freezing texture of the ice cream.

The step that matters

Stir in the macaroons while partially frozen. If the cream is too liquid, the crumbs sink and turn soggy; if it is frozen solid, they will not distribute evenly. Partial freezing suspends them evenly through the cream.

Swap the orange
