Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the crisp, watery vessel that holds the stuffing and absorbs the pickling liquid.
White mustard seed
Adds sharp, pungent heat and a firm bite to the stuffing.
Brown sugar
Balances the sharpness of the vinegar and mustard with sweetness.
Chopped onions
Add savory bulk and moisture to the stuffing.
Horseradish
Contributes sharp, volatile heat that fades slowly during pickling.

The step that matters

Salting the cucumbers and standing for 24 hours. Salt draws water out of the cucumbers through osmosis, softening them and making them less watery. Removing the seeds and salting evenly ensures the stuffing and vinegar penetrate uniformly and the pickle stays firm rather than soggy.
