Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chestnuts

  1. Preheat the oven to 400°F (200°C).

  2. Shake chestnuts with 1 tablespoon melted butter and place in the oven for 5 to 10 minutes.

  3. Remove the shells and inner skin, then cook the chestnuts in boiling salted water until tender.

  4. Drain the chestnuts and pass them through a ricer.

Make the stuffing

  1. Mix the riced chestnuts with the remaining ingredients and adjust seasonings to taste.

  2. Add cream or stock if a moist dressing is preferred.

What each ingredient does

Chestnuts
Provide the main bulk and a soft, starchy, slightly sweet body for the stuffing.
Soaked bread
Adds structure and absorbs moisture, helping the dressing hold together.
Eggs
Bind the mixture so it sets lightly when cooked.
Butter
Adds richness and fat, carrying flavor and softening the texture.
Liver and gizzard
Contribute savory, meaty depth and a more concentrated flavor.

The step that matters

Passing the chestnuts through a ricer. Cooked chestnuts turn grainy or gummy if mashed too hard or left too long in water. Pressing them gently through a ricer keeps the texture fine and even, so the stuffing binds smoothly.
