Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the filling and form a coating that helps crumbs stick and set in frying.
Flour
Thickens the cream with butter into a sauce that holds the chicken together.
Butter
Adds richness and fat that carries flavour and helps the filling stay tender.
Bread crumbs
Forms a crisp, golden outer crust when the croquettes are fried.
Cream
Provides moisture and richness so the chicken mixture becomes thick and creamy.

The step that matters

Let the filling cool fully before shaping. A warm, loose mixture cannot hold its shape and may split or slump when coated and fried. Cooling lets the starch-thickened sauce firm up so the croquettes keep their form.

Swap the onion

How well each one fits the dish's main ingredients (chicken, pepper, cream, flour, lemon, butter, egg):

  1. Spinachfits better
  2. Asparagusfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against chicken, pepper, cream, flour, lemon, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
