Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks form a smooth, rich base that thickens and binds the dressing.
Tomatoes
Provide the main body and juicy moisture of the salad.
Melted butter
Adds fat that makes the dressing smooth and rich.
Mustard
Adds sharpness that balances the richness of the yolks and butter.

The step that matters

Gradually add the raw egg to the yolk paste. Adding liquid ingredients slowly to a yolk paste helps them emulsify into a smooth dressing instead of separating into a greasy, broken sauce.

Flavor stand-ins for the mustard

How well each one fits the dish's main ingredients (tomato, egg, pepper, sugar, butter, vinegar):

  1. Capsicumbetter flavor fit
  2. Cucumberabout as good a flavor fit
  3. Mustardthe original
  4. Asparagusabout as good a flavor fit

Fit is the average pairing score against tomato, egg, pepper, sugar, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
